So with the warm weather in full force, you’ve already put away your slow cooker right? Take it back out!!  Summer isn’t just about grilling, even though it’s delicious and we all love it so much. You can also prepare great summer dishes with your slow cooker. Plus, it’s too convenient to let it go so quickly, since it is doing all the hard work, while you are out doing other stuff !

This pineapple pulled pork (try saying that quickly 3 times in a row ?) is the perfect example of a great, summer meal made in the slow cooker. The pineapple chunks in this recipe will bring you straight to the Hawaiian Islands! And the crunchy, creamy coleslaw, gives the sandwich it just the right balance of sweetness and freshness. You can also feed a whole bunch of friends with this, as the yield quite a lot of pork!

Who says that you should put away your slow cooker in the summer? This is a perfect summer dish with just the right amount of sweetness and crunch! Plus you can feed a whole bunch of people on a dime!

PINEAPPLE PULLED PORK SANDWICH
  1. - 1 large onion, chopped
  2. - 5 lbs Pork Shoulder (bone-in is better)
  3. - 1 tsp salt
  4. - 1 tsp black pepper
  5. - 1 tsp ground chili pepper
  6. - 1 cup unsweetened pineapple juice
  7. - 1 cup pineapple chunks
  8. - 1 cup your favorite BBQ Sauce
  9. - 2 garlic cloves, chopped
  10. - 2 tbsp brown sugar
  11. - English muffins or Burger buns
COLESLAW
  1. - 60 ml low fat sour cream
  2. - 1 1/2 tbsp white wine vinegar
  3. - 2 tsp Dijon mustard
  4. - 1 clove of garlic crushed
  5. - 1 bag of coleslaw mix (or 1/2 cup each of shredded red cabbage, green cabbage and carrots)
  6. - Salt and pepper
PINEAPPLE PULLED PORK
  1. Line the bottom of your slow cooker with the chopped onions.
  2. Massage the pork with the mix of salt, black pepper and chili pepper and place the pork over the onions.
  3. In a bowl, combine all the other ingredients, mix well, and pour over the pork in the slow cooker.
  4. Cover and set on low for 8 hours.
  5. Remove the meat to a large bowl and shred with forks. While you are doing that, set your slow cooker at high to reduce the sauce. Once the pork is all shredded, put it back with the sauce and mix well to let it absorb the juices.
  6. Serve on burger buns or, like me, on toasted English Muffins, with the creamy coleslaw.
COLESLAW
  1. In a small bowl, mix the first 4 ingredients for the coleslaw. Pour the desired amount over the coleslaw mix and toss well.
