Battered Fish Tacos With Mangoes & Creamy Asian-Style Slaw

These tacos are a perfect example of a parent-approved, successful meal with kids: the crispiness of the battered fish, paired with sweet mangoes and a tasty creamy slaw in a soft taco shell. My daughters love to assemble their own tacos and garnish them as they want, so this meal is a definite home run in my house!

Tacos
  1. - Janes battered fish bites (8 pieces- approximately half a box)
  2. - 4 flour tortillas
  3. - 1/2 mangoe, diced
  4. - 1/4 cup fresh cilantro chopped (plus about 1/4 cup for garnish)
Creamy Asian-Style Slaw
  1. - 1/2 cup chopped red cabbage
  2. - 1/2 cup chopped green cabbage
  3. - 1/4 cup grated carrots
Creamy Asian-Slaw dressing
  1. - 1 cup sour cream ( I used low-fat sour cream)
  2. - 1 tbsp soya sauce
  3. - 1 teaspoon Sriracha sauce (omit if your kids are averse to spicy sauces)
  4. - 1 teaspoon toasted sesame oil
  5. - 1 teaspoon rice wine vinegar
  6. - 1 teaspoon lime juice
  7. - 1 tbsp brown sugar
  8. * Fresh quartered limes to serve.
Instructions
  1. Bake the battered fish bites according to the package. Wrap the flour tortillas in a slightly damp, warm towel.
  2. Meanwhile, in a small bowl, mix mangoes with chopped cilantro.
  3. In another bowl, mix all the ingredients for the creamy asian-style dressing.
  4. In a big bowl, throw red cabbage, green cabbage and carrots and toss. (Either add dressing to taste directly to the slaw or put sauce aside and let everyone put as much as they'd like in their own taco).
  5. Once the fish bites are cooked through, cut them in half and arrange on a plate.
  6. To assemble, give everyone a tortilla and let the build-your-own-taco creativity begin!
Notes
  1. *Serve with fresh quartered limes.
