A few weeks ago, I was introduced to a fantastic restaurant in Montreal called Le Filet. I was lucky enough to be invited, along with a group of people, by a regular of this restaurant who ordered for the whole group and made our experience even more enjoyable. We were able to sample various plates from the menu and absolutely all of them were stellar. One of the dish we tried was a simple appetizer called Miso Gratin Oysters. Even though all the dishes were astoundingly good, this one truly stood up for me. I could not get enough of these oysters! I had to try to reproduce them at home!!
Well after a few trials and errors, here is what I consider to be a very close replica of these out-of-this word delicious little bites. And it is SO EASY!! It only requires 5 ingredients, including the oysters and you’ll be in paradise…
- 2 tbps real mayo (or Japanese mayo if you have)
- 1 tsp red miso paste
- 1 tsp lemon juice
- 1 tsp sugar
- 12 oysters
- Mix the first 4 ingredients together until completely blended.
- Shuck the oysters and keep them fresh by putting them on a bed of ice until you are ready to serve them.
- Put a small dollop of the mayo mix on each oysters. (Now this is where I diverged from the restaurant. They had put a lot more sauce on top of the oysters than I did. I prefer to have a bit less in order to better taste the freshness of the oyster.)
- To caramelize the filling, you can either use a cooking torch or arrange the oysters on a cooking sheet and broil them on the top rack of you over for 3-4 minutes. Both options work beautifully but the oven option tends to cook the oysters a bit, whereas the torch truly only broils the filling and leaves the oysters completely raw.
